ROLLED FILETS 
2 lb. filets (sole or flounder)
1 tsp. salt
Pepper to taste
1/2 lb. grated sharp cheddar
1 med. onion, chopped fine
1 egg, beaten
2 tbsp. water
3 slices bread crumbs
3/4 c. melted butter with dash of Tabasco
Parsley and lemon for garnish

Wipe each filet and season with salt and pepper. Sprinkle onion and cheese on each filet and roll up (jelly roll style); secure with a toothpick. Dip each roll in egg and water wash and roll in crumbs. Place in a greased baking pan. Pour melted butter over top and bake. When bake, broil a minute or two until crumbs brown. Serve with lemon and parsley. Bake at 400 degrees for 25-30 minutes. Broil 1-2 minutes. Easy.
