OVEN CHOWDER | |
2 lb. haddock or cod 2 c. peeled potatoes, cut sm. 1/4 c. chopped celery 3 bay leaves 1 1/2 tsp. parsley flakes 1 tsp. salt 1/4 tsp. white pepper 2 whole cloves 1 med. size garlic clove, minced or pressed 1/2 c. melted butter 1 c. very dry white wine or vermouth 2 c. boiling water 1 tsp. chopped fresh dill (dehydrated) - optional Place all the ingredients, EXCEPT THE BOILING WATER AND CREAM in a large casserole. Pour the boiling water over all, cover and bake for 50 to 60 minutes at 325 degrees. The fish should be flakey not mushy. Heat - do not boil - the cream add to fish mixture and sprinkle with the dill. |
