ICEBOX LEMON COOKIES 
2 sticks butter, melted
1 c. sugar
1 egg
1/2 c. evaporated milk
1 c. graham cracker crumbs
whole graham crackers
1 c. nuts, chopped
1 c. coconut

Mix butter, sugar, egg and milk. Bring to boil and boil for 1 minute. Remove from heat and add cracker crumbs, nuts and coconut. Line bottom of 8 x 15-inch pan with whole graham crackers. Pour mixture over crackers; top with more whole crackers. Top with Butter Icing.

Butter Icing:

1 stick butter, melted
1 c. powdered sugar
1/4 tsp. lemon extract

Mix together and pour over graham crackers. Store in refrigerator.
