PINEAPPLE PRINCESS BARS 
4 c. flour
1 c. sugar
3 sticks butter
1 can coconut or 6 oz. coconut
1 egg (put in last)

Mix all together (cream sugar and butter, add dry ingredients, adding egg last). Press 3/4 of the dough into bottom of cookie sheet. Spread with the filling, then crumble the remaining dough over the top of the filling. Bake in oven at 350 degrees for 40 to 60 minutes or until brown.

FILLING:

1 lg. can crushed pineapple
4 tbsp. sugar
4 tbsp. tapioca
4 tbsp. water

Or use 1 can pineapple pie filling.
