CRAB STUFFED FLOUNDER FILLETS 
For Crab Stuffing:

1/2 lb. crab meat
2 tbsp. minced red pepper
2 tbsp. minced green onion
2 tbsp. celery salt
1/4 c. butter
1 1/2 c. soft white bread crumbs

For Fillets:

4 flounder fillets
1 tsp. salt
1/2 tsp. white pepper
1/4 c. water

Preparing Stuffing: In large bowl, combine crab meat, red pepper, onion, celery, butter and bread crumbs. Mix well until thoroughly moistened.

Preparing Fillets: Lay fillets flat, more attractive side down. Sprinkle with salt and pepper. Place about 1/3 cup stuffing on each fillet and roll up from widest end. Secure with toothpicks. Arrange in a buttered shallow casserole dish; add water and cover loosely.

Bake for 20 minutes in a preheated 375°F oven.
