COLD BLUEBERRY SOUP 
1 qt. blueberries, rinsed & drained
3 c. water
3/4 c. sugar
2 tbsp. cornstarch

Boil water. Add blueberries. Add sugar and cook several minutes. Mix cornstarch with a small amount of cold water. Stir into berry mixture and bring to boiling point again. Cover and cool. Serve with a dollop of unsweetened whipped or sour cream.
