CITRUS COOKIES | |
2/3 c. butter or room temp. half & half 1/2 c. white sugar 1/4 c. light brown sugar, packed 1 egg 1/2 c. orange juice Grated peel from fresh orange 2 c. all-purpose flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt Cream butter, butter or half and half with sugars until fluffy. Add whole egg and mix. Add orange juice and peel. Add flour mixture (that has been sifted together - flour, soda, baking powder and salt). For variation add 1/2 cup coconut and 1/2 cup chopped nuts. Bake at 400 degrees for 10 minutes on an ungreased cookie sheet. Do not overbake (until edges golden brown only). Frost with Orange Icing. ORANGE ICING: 2 tbsp. butter 1 1/2 c. powdered sugar Sprinkle of salt Orange juice Beat all together except orange juice. Use orange juice to thin. Makes 5 dozen cookies. |
