SWEET POTATO CASSEROLE 
3 c. cooked sweet potatoes, mashed
1/2 c. butter, melted
2 eggs, beaten
1 tsp. vanilla
1/3 c. milk
1 c. sugar

Combine all ingredients in a mixing bowl and mix well. Pour into a 2-quart casserole dish. Sprinkle topping (below) over potato mixture and bake at 350 degrees for 30-40 minutes. Yield: 8-10 servings.

TOPPING:

1/2 c. brown sugar, firmly packed
1/4 c. all-purpose flour
2 1/2 tbsp. butter, melted
1/2 c. chopped nuts

Combine ingredients in a small mixing bowl and mix well. Sprinkle over sweet potato mixture.
