AMY'S EASY COFFEE CAKE 
BATTER:

3/4 c. sugar
1/4 c. soft shortening (butter or oil)
1 egg
1/2 c. milk
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt

TOPPING:

1/2 c. chopped nuts (optional)
1/2 c. brown sugar
2 tbsp. flour
2 tbsp. melted butter
2 tsp. cinnamon

Preheat oven to 375 degrees. Cream sugar and shortening. Add eggs and milk. Sift dry ingredients together and add to creamed mixture. Spread half the batter into a greased and floured 8-inch pan. Sprinkle with half of the topping.

Spread rest of batter on and sprinkle with remaining topping. Bake at 375 degrees F for 20-30 minutes or until a cocktail stick can be inserted into the center of the cake and come out dry. Serve warm with extra butter.
