WHOLE WHEAT BREAD OR ROLLS | |
2 pkgs. dry yeast 2 tsp. salt 2 c. warm water 1/3 c. honey or apple juice concentrate 1/3 c. oil 1 tsp. brewer's yeast (optional) 1 tbsp. bran (optional) 2 eggs 2 c. white flour 4-6 c. whole wheat flour 1 egg yolk mixed with 1 tbsp. water Sesame or poppy seeds for topping Mix first 3 ingredients. Let yeast dissolve, then add honey, oil, brewer's yeast, bran, eggs and white flour. Add whole wheat flour, one cup at a time. Dough should not be sticky. Coat with oil and cover with a towel. Let rise for 1 hour. Take "challah" without a Bracha. Makes 24 rolls, or 2 loaves. To make a loaf, divide dough into two halves. Roll out each piece until 1/2 inch thick. Roll up in jelly roll fashion and put in loaf pan. Brush with egg yolk and water. Sprinkle with sesame or poppy seeds if desired. Cover and let rise 1/2 hour. Preheat oven to 375 degrees. Bake for 30-35 minutes or until brown. |
