NANNY'S SNIFF PUDDING | |
1/2 lb. med. noodles 1/4 lb. butter 2 eggs 1/2 c. sour cream 1 lb. low-fat cottage cheese 1/2 c. sugar 1/2 tsp. vanilla Pinch salt Juice of 1/2 lemon Raisins Cinnamon Cook noodles as directed and drain. Pour into large bowl and add 1/2 the butter. Stir and set aside. In another bowl, beat eggs and add sugar, vanilla, salt, lemon juice, sour cream, cheese and raisins. Mix well. Fold into noodles, blending gently. Pour into well-greased 13 x 9 x 2 inch pan. Sprinkle top with cinnamon and dot with remaining butter. Bake in 400 degree oven for 40 minutes or until golden brown. Remove and let stand for 15 minutes so mixture sets. Cut into squares. Serve warm or cold. |
