SHRIMP AND RICE SALAD 
1 c. cucumber, chopped
1 c. onions, chopped
1 c. tomatoes, chopped
1 c. bell pepper, chopped
1 c. rice (uncooked)
1 1/2 lb. raw shrimp
3 tbsp. oil
Juice of 6 lemons
Salt & pepper to taste

Cook rice. Boil shrimp; peel and devein. Mix all of the vegetables together. Stir in oil, lemon juice, salt and pepper. Add shrimp and rice to vegetable mixture. Mix well and chill. Yield: 6-8 servings.
