DAD'S SPECIALTY - EASY STUFFED
PEPPERS
 
1 c. rice
3 green peppers (bell)
2 med. onions
1 tbsp. butter
1 lb. hamburg
6 mushrooms
1/2 bag spinach (fresh)
1/2 lb. Mozzarella cheese, shredded
1 tsp. basil
1/2 tsp. oregano
1/4 tsp. garlic powder
1/2 c. tomato sauce

Cook rice. Cut peppers in half and steam peppers on top of rice (or boil separately). Saute chopped onions in butter; set aside. Brown hamburg; pour off fat and discard.

Combine onions, rice, hamburg, chopped mushrooms, chopped fresh spinach, 1 teaspoon basil, 1/4 teaspoon oregano, sprinkle of garlic, 1/2 pound shredded Mozzarella.

Place peppers on bottom of 12x8x2 inch baking dish. Cover with hamburg mixture. Top with tomato sauce (1/2 cup). Bake at 350 degrees for 30 minutes. Serves 6.
