SPICY GRITS AND CHEESE 
3 c. boiling water
1 1/2 c. grits
Dash of salt
1 tbsp. butter
1 c. skim milk
2 eggs, beaten
1 c. jalapeno cheese, grated

In a 2 quart saucepan cook grits in boiling water, salt and butter. Cook for 5 minutes. Remove from heat, add skim milk, beaten eggs and cheese. Bake in a buttered casserole dish at 350 degrees for 40 minutes until golden brown.
