3 c. pinto beans 4 qts. water 1 clove garlic 1 c. salt pork diced Wash beans well. Cover with water and soak overnight, drain. Put beans, water, garlic and salt pork (no salt) in a large kettle. Cover tightly, bring to a boil. Simmer 1 1/2 hours until beans are tender, not mushy. Add boiling water during cooking. When beans are done, salt to taste. Cook until water is absorbed. |
