SOUR CREAM MUFFINS 
2 c. cake flour or 1 3/4 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1/2 tsp. baking soda
1 c. cultured sour cream
1 egg, beaten

Sift flour, resift with baking powder, salt, sugar and soda. In a large bowl, beat egg then add sour cream. Next add all dry ingredients to a lumpy consistency. Pour into greased cup cake pan. Bake at 400 degrees for about 20-25 minutes.
