GRATED SWEET POTATO PUDDING 
2 c. raw grated potatoes
1/2 tsp. grated lemon rind
2 tsp. each cinnamon, ginger, cloves and salt

(If you do not care for all the spices just add a generous amount of nutmeg.)

Beat eggs until light, add sugar, add milk and other ingredients. Put in a greased baking dish. Bake in moderate oven (350 degrees) about 1/2 hour. Stir with spoon and bake about 15 minutes longer. Serve with whipped cream sweetened and flavored with sherry or vanilla.
