POOR MAN'S COOKIES 
A deep saucepan or automatic deep fryer will be needed.

Sift together and set aside:

5 c. sifted flour
1 tsp. cardamom

Beat until mixture is thick and lemon colored:

10 egg yolks
2 egg whites
3/4 c. sugar
3 tbsp. brandy

Add slowly, stirring in 1 cup heavy cream. Blend in flour mixture, about 1/2 cup at a time, to make a soft dough. Wrap dough in waxed paper and chill overnight in refrigerator.

Heat grease to frying (360 to 375 degrees).

Meanwhile, roll dough a small portion at a time, to 1/16 inch thickness on a lightly floured surface. Cut into diamond shapes, 5x2 inches (make paper pattern). Make a lengthwise slit in the center of the diamond and pull one tip end through the slit and tuck back under itself.

Deep fry only as many as will float uncrowded one layer deep. Fry 1 to 2 minutes, or until golden brown, turning once during frying time. Drain over fat a few seconds before removing to absorbent paper. Sprinkle with powdered sugar. Store in tightly covered container. Makes about 6 dozen cookies.
