GREEK PASTA 
1 whole chicken breast, about 3/4 lb.
1 carton whipping cream
2 bunches green onions, chopped
2 tomatoes, chopped
2 cloves garlic, crushed
1 1/2 tsp. basil
Salt & pepper to taste
Hot pasta
1/2 stick butter
1/2 c. freshly grated Parmesan cheese

Cut chicken into bite-size pieces. Cook in skillet with butter until just cooked. Add garlic, green onions, tomatoes, basil and simmer until tomatoes have broken down, about 10 minutes. Pour over cream and salt and pepper to taste. Simmer 10 minutes more to reduce cream sauce a little. Combine with hot pasta and top with Parmesan.
