BANANA QUICK BREAD 
1/3 c. shortening
2/3 c. sugar
2 eggs, slightly beaten
1 c. ripe mashed bananas (2 or 3)
1 3/4 c. sifted all-purpose flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1 c. nuts

Beat shortening until creamy and glossy (2 minutes at medium speed on electric mixer). Gradually add sugar, beating until light and fluffy after each addition. Add eggs and beat until thick and pale lemon colored. Sift dry ingredients and add alternately with the bananas. Blend well. Grease bottom only on loaf pan, 9 x 5 x 3 inches. Turn batter into pan. Bake at 350 degrees for 60 to 70 minutes until cake tester inserted in the center comes out clean. Let the bread partially cool in pan 20 to 30 minutes before turning out on rack. Makes one loaf.
