ROUX (FOR ANY KIND OF GUMBO) 
1 c. cooking oil
1 c. flour
2 qts. warm water
1 c. chopped onion
1/2 c. chopped green onion
1/2 c. chopped bell pepper
2 stalks chopped celery
Salt to taste
Black and red pepper to taste (f you like it spicy)

In a heavy pot or Dutch oven, heat oil, then add flour, stir continuously until it gets a medium brown. Be patient this takes a while! Add about 2 quarts warm water. Season this with onions, green onions, bell pepper, celery, salt and pepper. Bring to a complete boil for about 15 minutes.

Add chicken or any of your favorite seafood to make whatever gumbo you prefer. Cook until meat is done. Serve this in a bowl over steamed rice. Sprinkle with file powder.
