OATMEAL SCOTCHIES | |
1 1/4 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. ground cinnamon 1 c. (2 sticks) butter, softened 3/4 c. sugar 3/4 c. packed brown sugar 2 eggs 1 tsp. vanilla 3 c. quick or old fashioned oats 2 c. butterscotch chips Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, sugars, eggs and vanilla in large mixer bowl until creamy. Gradually add in flour mixture. Stir in oats and morsels. Drop by teaspoonfuls onto ungreased baking sheet. Bake in preheated 375°F oven 7 to 8 minutes for chewy cookies or 9 to 10 minutes or crispy cookies. Let stand 2 minutes. Remove to wire rack to cool completely. Makes about 4 dozen cookies. |
