CHICKEN ENCHO CASSEROLE 
1 boiled chicken, boned
1 pkg. corn tortillas
1 can cream of chicken soup
1 can cream of mushroom soup
1 can green chilies, chopped (mild)
1 block yellow cheese
1 sm. can chopped olives
1 can Encho sauce

Boil chicken; cool and bone. Pour small amount Encho sauce in pan. Tear tortillas into pieces; lay in bottom of pan. Add layer of chicken; spoon on layer of soups, layer of cheese, layer of tortillas, layer of chicken, and layer of soups, etc. Top layer should have remaining cheese added and Encho sauce. Top with green chilies and olives. Bake at 350 degrees for 45 minutes.
