PENUCHE 
2 c. light brown sugar, packed
1 c. whipping cream
1 c. pure maple syrup
2 c. chopped walnuts

In 3-quart microwave-safe bowl, stir together brown sugar, cream and maple syrup. Microwave on high 17 to 19 minutes, stirring well after 7 minutes. When done, a few drops will form a soft ball in cold water. Let stand until lukewarm. Beat 10 to 12 minutes with electric mixer until candy becomes creamy. Stir in nuts and pour into buttered 8-inch square dish. Refrigerate until set, then cut into squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.
