VEAL IN LEMON SAUCE 
3/4 lb. veal round steak, about 1/2 inch thick
1/4 c. all purpose flour
2 tbsp. butter
2 tbsp. salad oil
2 tbsp. lemon juice
Salt and pepper

Cut veal steak into 4 serving pieces; pound until 1/4 inch thick. Coat with flour; shake off excess. Heat butter and oil in skillet over medium heat until hot. Cook veal until tender and brown, about 4 minutes on each side. Remove veal to heated platter. Stir in lemon juice. Heat a few minutes, pour over veal, sprinkle with salt and pepper. 4 servings.
