PECO FLAKE CANDY 
2 c. sugar
1 c. water
1 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
1 c. light corn syrup
2 c. raw peanuts
1 pkg. wide flake coconut

Combine sugar, syrup and water in heavy skillet and cook, stirring constantly, until sugar dissolves. Add salt and nuts. Cook, stirring occasionally, to hard crack stage, 294 degrees. Add butter, vanilla and soda. Stir in coconut and pour onto 2 buttered cookie sheets. While still warm, pull out to desired thinness. When cold, crack into pieces.

VARIATION: 1 cup brown sugar instead of white sugar.
