CHEESE - APRICOT SWEET ROLLS 
1/2 c sugar
2 tsp. ground cinnamon
16 oz. loaf frozen bread dough, thawed
2 tbsp. sugar
2 tsp. all - purpose flour
3 oz. pkg. cream cheese, softened
1 egg yolk
1/2 tsp. vanilla extract
2 tbsp. apricot preserves

Combine first 2 ingredients in a large shallow dish, stirring well; set aside. Divide dough into 12 pieces, and shape each piece into a 12 - inch rope. Roll ropes in sugar - cinnamon mixture. Shape each rope into a loose coil, tucking ends under roll; place rolls on a lightly greased baking sheet. Combine 2 tablespoons sugar and flour. Add cream cheese, and stir until smooth. Add egg yolk and vanilla, stirring well. Spoon about 1 teaspoon cheese mixture into center of each coil, and top with 1/2 teaspoon apricot preserves. Let rise, uncovered, in a warm place (85 degrees), free from drafts, 30 minutes or until doubled in bulk. Bake at 375 degrees for 15 minutes or until golden brown. Remove immediately from baking sheet, and cool on wire rack. Yields 1 dozen.
