CALIFORNIA FRUIT LOAF | |
1/4 c. butter 1/3 c. brown sugar 2 tsp. grated lemon peel 2 tsp. grated orange peel 1 egg, unbeaten 1 c. cottage cheese 1 1/2 c. flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped prunes 1/2 c. chopped dried apricots Blend butter, brown sugar, lemon peel and orange peel. Add egg and cottage cheese. Mix together flour, baking powder, baking soda and salt; add to other ingredients. Mix well. Stir in prunes and apricots. Pour into greased loaf pan. Mixture will be stiff. Bake 1 hour at 350 degrees. Cool. Wrap and store in refrigerator. Serve with butter or cream cheese. A good holiday bread. |
