CHOCOLATE PIZZA | |
1 1/2 c. semi-sweet chocolate chips 1 c. butterscotch chips 3/4 c. miniature marshmallows 3/4 c. chopped dry roasted peanuts 3/4 c. crushed ripple potato chips 2 tbsp. flaked coconut 13 maraschino cherries, cut in half (opt.) 1/4 c. plain M & M's 4 oz. white candy coating, broken into squares 1 tsp. vegetable shortening, if melting chips in double boiler 4 tbsp. vegetable shortening if melting chips in microwave Draw 10" circle on waxed paper. (Circle should fit inside pizza pan.) In medium bowl, combine chocolate and butterscotch chips and microwave on medium (50%) 4 to 6 minutes or until chocolate melts and can be stirred smooth. Stir in marshmallows, peanuts and potato chips. Mix well to coat. Spread mixture evenly in 10" pan. Sprinkle with coconut. Top with M & M's and cherries (set aside). In 2 cups measure, combine candy coating and shortening. Microwave on medium 3 to 4 minutes until smooth and creamy. Drizzle over chocolate pizza. Chill at least 1 1/2 hours until set. Peel off waxed paper and place on serving plate. Melt 2 tablespoons vegetable shortening with each cup of chips. This prevents chips from burning and becoming lumpy. |
