CHICKEN & CHEESE CASSEROLE 
2 lg. chicken breasts
1 can cream of chicken soup
1 1/2 c. shredded Cheddar cheese
1/2 c. sour cream
3 tbsp. melted butter
1/3 c. crushed Ritz crackers

Boil chicken until tender, approximately 30 minutes. Let cool, then tear into small pieces. Stir in the soup, 1 cup of cheese and the sour cream. Put chicken mixture in casserole dish. Add Ritz crackers to the melted butter and sprinkle over chicken. Bake at 350 degrees for 25-30 minutes.
