CARROT CASSEROLE 
1 lb. carrots
2 beaten eggs
1 1/2 c. milk
4 oz. grated cheese
1 c. Ritz cracker crumbs
2 tbsp. softened butter
Salt

Boil cleaned carrots in salted water; mash. Mix in other ingredients. Put into an oven proof dish and bake at 350 degrees for 30 minutes; can be easily doubled using only 3 eggs. Can also be made ahead, just adjust cooking time.
