THIN WHITE SAUCE 
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. black pepper
2 c. skim milk

Melt butter over low heat; add flour, salt and pepper; stir until well blended. Remove from heat. Gradually stir in the milk and return to heat. Cook, stirring constantly, until thick and smooth. Makes 2 cups.

This sauce is used for creaming foods like vegetables and fish and as a base for other sauces.
