LOW FAT SKILLET ORIENTAL 
1 lb. tenderloin steak, cut into strips
Or 1 lb. chicken breasts, cut into strips
1 c. chopped onion
1 c. uncooked rice
1 (10 1/2 oz.) can beef broth (or consomme)
1 (10 1/2 oz.) can water
4 tbsp. soy sauce or teriyaki
1/2 green pepper, chopped
1 (2 oz.) jar slice pimento, drained
1/2 c. chopped water chestnuts

Spray large skillet with Pam and put burner on high. Pour in 1 tablespoon soy or teriyaki sauce and 1 tablespoon water. When this heats up, drop in meat and stir to sear. Stir in onion, rice, broth, rest of soy or teriyaki sauce (3 tablespoons) and 1 can water. Bring to boil. Reduce heat, cover and simmer for almost 25 minutes. Stir in green pepper, pimento and water chestnuts. Heat 5-7 more minutes and serve.

This is so easy and low in fat, high in fiber. Good with green salad (watch dressing) or fresh fruit salad.
