BEST WHITE FRUIT CAKE | |
1/2 lb. butter or 1 stick butter + 1 stick butter 1/2 oz. vanilla 1 c. sugar 5 lg. eggs (or 6 med. ones) 1 3/4 c. flour 1/2 tsp. baking powder 4 c. chopped pecans 8 oz. red cherries, chopped 8 oz. green cherries, chopped 4 oz. pineapple 4 oz. citron Cream butter and sugar until fluffy. Blend in eggs. Mix part of flour into fruits and nuts. Sift remaining flour with baking powder. Fold into eggs and butter mixture. Add vanilla. Mix well and fold in fruits and nuts; use a large bowl. Pour into a greased "brown paper" lined tube pan or small loaf pans. Place in a cold oven and bake at 250 degrees for 3 hours. Cool in pan. Keep well wrapped. |
