SWEET POTATO PIE | |
2 med. sweet potatoes (about 1 c. when mashed) 1/2 c. brown sugar 1/4 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. allspice 1/2 tsp. vanilla 2 eggs 1 sm. can evaporated milk To prepare sweet potatoes, set oven at 350 degrees and bake potatoes for 1 1/2 to 2 hours until very soft. Cut off about 1 inch of the pointed end of the potato to eliminate some of the stringy fiber. Then peel and slice in about 1/2 inch slices, crosswise of the grain. Mash with a potato masher before adding the other ingredients. When mixing the custard with an electric mixer, the rest of the little pieces of stringy fibers will cling to the beaters; therefore, getting rid of almost all of them. This is important for a smooth, creamy texture. |
