BARBECUE SAUCE | |
1 c. cooking oil 1 tbsp. flour 2 c. onions, finely chopped/blended 1 can tomato paste 7 oz. tomato ketchup 1/2 c. mustard 2 bell peppers, chopped 2 celery stalks 1/4 c. brown sugar 1/4 c. white sugar 2 strong green peppers Salt Use a 3 quart size cooking vessel. Turn fire on high. Put 1 cup cooking oil in pan. When oil is hot, add the flour; cook until beige (before it turns brown). Add onions; let saute until onions are soft. Add all remaining ingredients plus 1 cup water. Cook over low heat for 1 hour. Stir occasionally as it tends to stick. HINT: Garlic salt and other seasonings may be added. Brown and white sugar may be added for a sweeter taste. If sauce is too thick, water can be added. If making barbecue, use sauce as a basting sauce by adding extra cooking oil when you begin to cook the sauce. When the sauce is cooked, skim the oil off the top. |
