ZUCCHINI BREAD 
3 eggs
1/2 c. oil
2 c. sugar
3 c. self-rising flour
1 c. nuts
1/2 tsp. vanilla
1/2 tsp. salt
2 tsp. cinnamon
2 c. grated zucchini
1 c. raisins or crushed pineapple or coconut

Beat eggs until fluffy. Add oil, sugar, and vanilla. Add zucchini and dry ingredients. Stir in raisins and/or pineapple. Pour into greased loaf pans. Bake 1 hour 10 minutes at 350 degrees.
