FLAKY PASTRY 
3 cups flour
1 tsp. salt
1 cup shortening
1 tbsp. vinegar
1 egg, well beaten
7 to 8 tbsp. ice water

Mix flour and salt. Cut in shortening until mixture is coarse and granular. Mix vinegar and egg to ice water. Add a little at a time, tossing the flour mixture with a fork until all particles are moistened. Do not knead, but press into a ball. Store in refrigerator until ready to use.

Makes 4 pie shells.
