ROSQUILLAS FRITAS | |
2 eggs 3 c. flour, approx., more will be needed in order to roll dough 1 1/4 c. sugar 2 tsp. yeast 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. almond powder (or 1/2 tsp. almond flavoring) 2 tbsp. butter 3/4 c. milk Oil Preparation: Put a deep pan adequate for deep frying about 3/4 full of oil and heat to around 370 degrees. Mix half of the flour with the remaining ingredients and beat until dough begins to thicken. Add remaining flour and mix well. Flour a flat surface and remove the dough from the bowl. This is a sticky dough which will take up the necessary flour in order to roll this out easily. First knead in the flour to make it a pliable, smooth dough. Roll the dough about 1/2" thick and then cut in a donut shape. Add a few to the hot oil and fry for 2 to 3 minutes. Turn them over so they are a light golden brown. Dry on paper toweling and sprinkle with sugar or a combination of sugar and cinnamon if desired. Makes about 2 dozen doughnuts. This is a favorite bread used at many holiday fiesta celebrations. |
