CAULIFLOWER POLONAISE 
2 lg. heads cauliflower
Salt
1/2 c. butter
1 1/2 c. bread crumbs
1 tsp. salt
1/4 c. grated Parmesan cheese; optional

Boil cauliflower in a large amount of boiling salted water, or steam over boiling water. Cook about 20 minutes until tender but not too soft. Melt most of the butter; add bread crumbs and salt and saute and stir until brown. Stir in the cheese if you wish. When cauliflower is done, remove to a warm dish and blot dry. Add remaining butter to the crumbs and spread foaming over the cauliflower. Serves 12.
