MINIATURE CHERRY CHEESECAKES 
2 dozen vanilla wafers
2 (8 oz.) cream cheese
3/4 c. sugar
1 tbsp. lemon juice
2 eggs
1 (1 lb. 5 oz.) can cherry pie filling
1 tsp. vanilla

In 2 dozen small muffin cups, place paper liners. In bottom of each liner, place 1 wafer.

In bowl, soften cheese, gradually add sugar. Mix in juice and vanilla. Beat in eggs, one at a time, until light and fluffy. Spoon into liners. Bake at 375 degrees until set, about 15 minutes. Cool. Remove from tins. Do not remove liners. Top each with 1 tablespoon pie filling. Cover and refrigerate or freeze until ready to serve.
