CREAM OF POTATO SOUP 
5 tbsp. butter
8 tbsp. flour
8 c. milk
4 c. peeled, diced, cooked potatoes
1/2 - 1 tsp. salt
Pepper to taste

Melt butter in large pan on low; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in potatoes, salt and pepper; cook 5 minutes or until thoroughly heated.
