SPANAKOPETA (SPINACH PIE) 
2 (10 oz.) pkg. fresh/frozen spinach
1 bunch scallions, chopped, including tops
1 lb. cottage cheese
1/2 lb. Feta cheese, crumbled
6 to 7 eggs, beaten
1 1/2 tbsp. flour
1/2 lb. butter, melted
1/2 c. milk
Salt to taste
1 pkg. filo dough

Preheat oven 400 degrees. Combine spinach, scallions, cheeses, eggs, flour, milk, 4 tablespoons butter and salt. Place a filo sheet in bottom of buttered 9x13 pan. Trim to fit. Brush with butter. Repeat 8 times. Place spinach filling in the pan, spread evenly. Top with 8 to 10 filo sheets. Brushing each sheet with butter. Refrigerate until firm. Cut into triangle pieces before baking. Reduce oven to 350 degrees. Bake 45 minutes or until golden brown. Cool completely before removing from pan.
