COUNTRY SAUSAGE LOW FAT 
2 lbs. lean pork or boneless skinless chicken
1 tsp. salt
1/2 tsp. ground white or black pepper
1/2 tsp. dried thyme
1 tsp. dried sage
1/4 tsp. dried summer savory
1/2 tsp. sugar
1/2 tsp. crushed red pepper flakes, optional

Have your meat man grind the meat twice (or do your own if you have a grinder). Mix with the seasoning which can be adjusted to your taste, except do use the salt for both flavor and preservation. Let sit in refrigerator covered, overnight to blend flavors. Form into patties and saute in pan sprayed with Pam or in a little vegetable oil.

Can wrap tightly and freeze use within 1 to 2 months. This also works well with turkey and any seasonings of choice.
