ZESTY SALAD 
2 tbsp. red wine vinegar
1 tbsp. olive oil
1 garlic clove, pressed1 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. freshly ground pepper

In jar with tight fitting lid combine all ingredients; shake well.

1 med. tomato, cut in wedges
1 c. cauliflower florets
1 cucumber, sliced
1/2 c. thinly sliced red onion

In medium bowl combine vegetables. Toss with dressing. Makes 4 servings.
