HOT GREEN TOMATOES 
1/2 c. bias-sliced celery
3 green onions, bias-sliced into 1" pieces
2 tbsp. olive oil or cooking oil
1 clove garlic, minced
1/8 tsp. crushed red pepper
3 med. green tomatoes, each cut into 6 wedges
1 tsp. parsley
Fresh or pickled red hot pepper, optional
Salt & black pepper to taste

Use microwave-safe bowl. Combine celery, onion, oil, garlic and crushed red pepper. Microwave covered on high (100% power) for 1 1/2 minutes. Arrange tomato wedges in shallow 1 or 1 1/2 quart microwave-safe dish. Spoon onion mixture over the tomatoes. Sprinkle parsley over all.

Cook, covered, on high for 2 1/2-4 minutes or on low wattage for 6 minutes or until tomatoes are fork tender. Rotate dish once halfway through cooking. Season to taste with salt and black pepper. Garnish with fresh or pickled red hot pepper. Makes 4 side-dish servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
