HOT SHRIMP SALAD | |
1 lb. deveined and cook sm. shrimp 2 c. sliced celery 1/2 c. sliced water chestnuts 2 hard-boiled eggs, chopped 2 tbsp. grated onion 3/4 c. mayonnaise 2 tbsp. lemon juice 1/2 tsp. salt 1/2 c. shredded American cheese 1 c. crushed potato chips Combine shrimp, celery, chestnuts, eggs and onion. Blend mayonnaise, lemon juice and salt. Stir in shrimp mixture. Place in greased 8 inch round glass baking dish. Top with cheese and chips. Bake at 400 degrees for 20 minutes. Serves 4 to 6. |
