HOME FROZEN FRESH PEACH PIE
FILLING
 
9 lbs. ripe peaches
6 oz. can frozen orange juice
3 1/2 c. sugar
1/2 c. plus 2 tbsp. Minute Tapioca
1 tsp. salt

Scald, peel and slice the peaches to make four quarts. Pour undiluted orange juice over peaches. Drain off excess juice (this can be used again); combine peaches with sugar, tapioca and salt. Spoon into one quart freezer containers and store in freezer until ready to use.
