APPLE STRUEDEL 
2 1/2 c. flour
1 tsp. salt
1 c. soft butter (2 sticks)

Mix until crumbly with pastry blender.

Add 1 egg yolk plus enough milk to make 2/3 cup. Mix like pie dough and roll out half to fit the pan (15x10x1).

FILLING:

4 c. peeled and sliced apples
1 c. sugar (may use less)
4 tbsp. flour
1/2 - 1 tsp. cinnamon (according to taste)

Mix together, spread over first layer of dough in the pan.

Roll out second half of dough, cover apples, seal edges. Beat egg white, brush on for glaze, slit holes in top crust. Bake at 350 F. for 40 minutes. May use powdered sugar glaze. Cut in squares. Delicious hot or cold.
