MAINE APPLE PIE 
1 c. flour
3/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
2 eggs
2 c. diced apples (don't have to peel)
1/2 tsp. lemon extract
1 tsp. pumpkin pie spice or your choice of spice
3/4 c. nuts (optional)
1 tsp. vanilla

Mix following ingredients with spoon first: flour, sugar, baking powder, salt, eggs, lemon extract and spices. Use a large bowl - then add in apples, nuts (if you choose) and vanilla. Stir well together with spoon.

Pour into 1 (10 inch) buttered pie pan (pyrex preferred). Cook at 375 degree preheated oven for 20-25 minutes or until golden brown and toothpick inserted in middle comes out clean. Needs no crust, no peeling, can use other fruits in place of apples.
